Pumpkin Bread Revisited

After quite a few years using the original recipe, I had to cut down on the ridiculous amount of sugar that even I couldn’t really handle. This version has about a third of the sugar and even more pumpkin flavor


  • 15 oz pumpkin
  • 1 1/2 cups sugar
  • 2/3 cup brown sugar
  • 4 eggs
  • 2/3 cup water
  • 1/2 cup oil
  • 1/2 cup applesauce (or additional 1/2 cup oil)
  • 1 tsp salt
  • 3 1/2 cups flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp cloves
  • 1/4 tsp ginger
  • 1/2 cup chocolate chips (optional)

Whisk eggs and sugars together until sugar dissolves. Slowly add the oil, then add applesauce, water and salt.

In a separate bowl, whisk the flour, baking soda and spices together. Then stir into the wet ingredients until well combined and no white streaks remain. Stir in chocolate chips if using

Pour into two greased pans. You may sprinkle tops with sugar.

Bake at 350 degrees for about 50-60 minutes
