Gail’s Ultimate Potato Salad

This is the ingredient list I’ve gathered from tasting Gail’s most wonderful potato salad

Ingredients

  • 2 lbs red potato
  • 2 Boiled Eggs, chopped
  • 2 Carrots, small dice
  • 2 Celery Stalks, small dice
  • 3 Roasted Red Peppers, diced
  • 1/4 Red Onion, finely chopped
  • 3 Green Onion, chopped
  • Parsley, minced
  • 3/4 c Mayo
  • 2 TBSP Mustard
  • 2 TBSP Relish
  • 3 TBSP Vinegar
  • 3 TBSP Sugar

Bring potatoes to a boil starting with cold salted water and cook till tender.  Let potatoes cool slightly before cutting into 1 inch cubes

While still warm, toss with vinegar and refrigerate

Add the mayo, mustard, relish, sugar, parsley, big pinch of salt/pepper in a separate bowl and mix to combine

Add the remaining ingredients to the potatoes, then stir in the mayo mixture
