Lila’s persimmon cookies

 When I was a kid, my dad patient, Lila Lindsey made her wonderful persimmon cookies for the holidays.

Persimmon Cookies   –   Yields 6-7 dozen
2 cups persimmon pulp
2 t baking soda
2 c sugar
1 c shoening
2 beaten eggs
1 t cloves
1 t nutmeg
2 t cinnamon
2 t vanilla
1 t salt
4 c flour
1 1/2 c raisins
1 1/2 c nuts

Mix persimmon with baking soda and set aside
Sift flour spices and salt
Cream sugar and shortening, then add flour mixture
Add raisins and nnuts
Drop by the spoonful on a greased sheet
Bake at 375 degrees for 12-14 minutes
