- 2 eggs
- 1 cup milk
- 1 TBSP melted butter
- 1/2 tsp salt
- 1 cup flour
- 1 TBSP oil (for the popover tin)
- In a blender, combine the eggs, milk and butter until smooth
- Add the flour and salt and blend till bubbly, about 1 minute
- Let rest for 15-30 minute
- While the batter rests, set the oven rack to the lowest setting and preheat to 450 degrees
- About 10 minutes before pouring in the batter, spoon 1/2 tsp oil into each well (will make 6). Place the popover tin into the hot oven till the oil starts to smoke
- Remove the tin from the oven, then quickly pour the batter into the 6 tins. Return to the oven
- Bake at 450 degrees for 20 minutes and watch them pop over!
- Lower the heat to 350 and bake another 15 minutes, covering with foil if needed
